Meal Planning, Grocery Shopping and Price Matching (Oh MY!)

On more than one occasion, people have asked me how I do my shopping and manage to stay on or below budget almost every time. Well, I have a system. It's not rocket science or anything, but it certainly helps out. In fact a friend of mine is coming over this weekend to learn. I figured I should prepare since I'm a little nuts and thought I'd share with everyone at once. Now to tell you how I guess I should start with the why.

After my son was born, my husband gave me the option of staying at home or going back to work. First let me say I am so thankful he gave me the option. I know that some couples don't get the option and I am so happy I've been able to spend so much time with my little guy.  However, 2 weeks after he was born he developed a milk allergy and I was no longer able to breastfeed. Also he was on a soy formula which is much more expensive than the dairy versions. We held on and pinched what we thought we could but we were struggling. (as I'm sure most can relate) My husband came to me and said we either needed to BOTH be working or I had to find a way to make ends meet. I started crocheting baby hats and trying to sell them online but that didn't work out as well as I'd hoped. I tried ruffle scarves too but to no avail. So, I went to Pinterest (you know, my favorite website) and started looking for frugal ways to change up what I had. I started with laundry soap. I have been making it for 3 years now and I know that change alone has saved us a ton. I also made my own household cleaners, shower cleaners, dishwasher detergent, etc. Some worked, some didn't. I didn't let that discourage me though. We also set ourselves on a pretty strict budget. My husband gave me $200 a paycheck ($400 a month) to feed the 3 of us. Some weeks were great, others I cut pretty close. A couple of times I've even been over budget. Thankfully, never over about $20 though. My husband constantly sings my praises to anyone that will listen. Especially his coworkers and friends. It's almost become a competition with us. I love surprising him.

A few months ago one of his coworkers told him of a new website that lists all the local ads and Walmart will price match them. I made my grocery store list, went to the website and wrote down some of the things I was going to buy with the new prices. I was very nervous at first, but it worked. The first time I saved about $40. The next time I saved $70. I was on a high. A savings high. (There are some times I don't do as well as others but it all depends on the sales. I do try to stock up if the prices are good and I have extra budget.) On the website I use, they also link coupons if they are available. I currently don't own a printer so I miss out on that extra savings but if you do, then you can save even more. Well, I suppose I've chattered enough. This is my system. (note - we are currently eating a low carb/diabetic diet, since I have recently been evaluated as pre-diabetic. Don't want to take any chances! But you will see a lot more produce and less pastas,breads, etc. Trust me that this works with ANY diet and ANY lifestyle as we just moved to this "diet" and it worked before and STILL does!)

First I plan what meals I want to make the next couple weeks (and I check the calendar to see how many I need to plan for until the next paycheck) and it looks something like this. (although usually it's handwritten.)



After that is done, I write out EVERYTHING I need for that recipe. Even things that I know that I have. The only exception is things you always have like salt, pepper, milk, butter, etc.(It will all make sense very soon, grasshopper) When it's done, It looks kinda like this.

Then I make a tally of how much of each thing I need.  I know it kinda looks like alot but that list will get much shorter here in a second.



After all that, I take my list to my fridge, freezers, pantry, etc. and cross off everything I already have. That way I know exactly how much I need of each item and nothing gets forgotten. After all that, It looks something like this.

Ahh. Much better. I take this list and make up my grocery list. I usually keep a list on the fridge of things we are low on or out of so I just combine the lists and poof! Grocery list is done. Well, mostly. (note - when I make my grocery list, I put in categories, it helps me not miss things and make 20 trips around the store. Also when you see the tally marks, it doesn't mean just one chicken breast etc. It is one meal's worth. So for us, it's 2 large or 3 small. Same thing with veggies. Also when making my final list - It only gets tally marks if it's more than one that is needed.)  

Next, if your state is listed on Pricematcherz then go on there and write what you need or print the whole list or whatever you want. Normally what I do is write really small next to my list item the price. I can't really do that on the typed version without completely giving me a formatting headache. Some Walmart stores want you to have the ad but I usually just have the website on my phone and it's worked for me. Do not be ashamed to price match. The Walmart employees I have come across are typically very patient with me and don't question me. It's just silly to pay full price!  (Some people have had trouble though so it might be worth buying a paper. You'll make up the cost in sweet sweet price match savings!)Anyways, this is my method, I hope it was easy enough to follow. If you have any questions please message me on here. My Favorite Time of Year!

Growing up in North Carolina, I really learned to love love love FALL! I love seeing the different colored leaves on the trees (and an occasional drive down the Blue Ridge Parkway) and the brisk weather. Putting on sweaters and having bonfires, drinking apple cider, etc. Things are a little bit different now that I'm in Nebraska - but not by much. Here, our fall is just a bit shorter is all, which means that we just cram everything in. This weekend was chock full of such behavior.  Friday, the little guy and me went with my mother in law to do a little shopping and came across this little beauty. 


 Isn't he just ADORABLE!? Ok so I'm a proud mama, what can I say? And I put him in his little festive Mickey hoodie! Goodness I love that little boy so much!  Well anyways, Today we went to the local Pumpkin Patch to pick out the PERFECT pumpkin!



Well, after quite some time, my little guy found what he deemed the "perfect punkin". Daddy had to carry it because it was so big! We also got some small pumpkins for family craft time. Today after nap time we decided to paint them. We all did our own painting with q-tips and black acrylic paint. I made an "emo" pumpkin and the hubs painted a "spider" pumpkin (looks like a spider on top) The little guy just went a little crazy, in typical 2 year old fashion. He had an absolute blast and I think we might have to do it again before Halloween.

Korean BBQ Beef - Bulgogi

About 6 years ago, I went on my first "real" date with my now husband to eat at a Korean restaurant. I had never had it before but he grew up eating it. I gave it a try, loved it, and tried for many years to make it. There are some marinades available at grocery stores and most Asian markets. Some are good, some are very bad. But, they are all worth a try. I found a recipe on Pinterest about 6 months ago and started with it. (Here is the link) http://www.sixsistersstuff.com/2011/10/korean-bbq-beef.html

It was an excellent recipe, and was very good. But, the taste wasn't quite...Bulgogi. Or, at least, the Bulgogi I was used to eating. So, I started tweaking and adding. And so I came up with the following Recipe. I hope it is easy to follow and you enjoy it as much as our family does. If you have any questions, feel free to message me.

Korean BBQ Beef (Bulgogi)

 1 1/2 lb.  steak, cut against the grain into thin slices or pieces ( I use the ultra thin beef for latin dishes - Carne Picada Extra Thin - way cheaper than sirloin or ribeye and already in super thin bite size pieces but you can choose your favorite)

1/2 c. rice wine or pear juice (I use pear juice from the baby aisle)

1/2 c. low-sodium soy sauce (DO NOT use regular. But, sometimes, I do half regular and half low sodium)

4 Tbsp. brown sugar (or more, to taste)

2 Tbsp. minced garlic (or more, to taste. I use at least 4 cloves)

1 tsp. Sriracha chili sauce (I just use a shake or two of red pepper flake)

1 1/2 tsp. sesame oil

1/2 bag (approx) shredded carrots (matchstick)

1 bag  green onion, chopped in small pieces. (I use the whites, and about an inch or two of green)

1 asian pear, grated and juice

ginger (powder or fresh)-to taste (I LOVE ginger, so I use a lot. But, whatever you like is fine)
Combine all ingredients (except steak) in a large bowl. This is less about exact measure and more about smell. It should have a slight soy and sesame smell with a sweet after note. No ingredients should overpower.
Add sliced steak.
Marinate at room temperature for 1 hour or up to 8 hours in the refrigerator (usually I make the night before and cook for dinner the next night.)

If cooking on a stovetop (Cast iron works best because of even heating but any skillet will do)
Preheat skillet with a little oil or nonstick spray. (seriously, get that thing screaming hot!) Place meat in hot skillet but do not over crowd. Cook quickly (it only takes a few minutes!) in small batches and serve with your favorite asian sides - And don't forget the sticky rice!
If cooking on the grill (I have never done this but heard it's amazing - especially on charcoal. these directions came from the original recipe mine was based off of. )
 Preheat the grill. While the grill is heating, thread the steak pieces onto bamboo skewers. Cook over medium-high heat for about 3-4 minutes per side, being careful not to let the meat get too cooked. Serve immediately; serves 4-6.


EDIT 1- Got a message from a High School buddy who is currently living in Japan. She said this marinade is the closest to homemade she's found so far. So, if you are worried about trying the homemade version, try this if you can find it. Probably available in Asian Markets.  Thanks Brigitte! :)

Pizza Muffins are as awesome as you think they are!

Yes I have tried another Pinterest pin with awesome success! They are called Pizza Muffins. They are so tasty. I made 12, and my hubby ate ...well... we'll say quite a few! This is the 2nd time I've made them but the first time they didn't last long enough for pictures! haha So, This is what they looked like!

I'm back! (with vacation pictures!)


So, I have returned. I know you missed me! (ha!) We have had an eventful month or so. It all started with our Vacation/Family Reunion in NC. We drove there and back in our minivan with Peck and the 2 pugs. Let me say - That was an adventure! Peck took it really well but our A/C broke while we were in the horrible 95+ degrees and humidity that is the south. So, let me say the trip home was super fun! Since I'm such a proud mama, I'm going to post pictures now.

We stayed with my BFF that I've known since we were babies - She has a baby now too! He was born the day after Peck's first birthday. Isn't that awesome!!! They got along great and it was really fantastic to spend all that time with them. Love 'em to pieces!


We had a great time but man, I am so glad to be home!! Also, I am happy that the dealership here fixed the A/C in our van the day after we got home.

I have some more Pinterest success to post, but that will come another time since an adorable curly headed little boy is pulling my hands off the keyboard and wants some snuggle time!

Household Recipes (per request)

I have been requested by some people to post the recipes I use for my household products. So - Here is what I am currently using.

First off is my laundry detergent. This is the 3rd different kind I've made and it's by far my favorite. It makes a TON of soap. I have shared with friends and relatives and used 2 containers full and still haven't put a dent in the recipe I made almost 4 months ago. It cost about $20 but I'm thinking it will last at least a year (and we do at least 1 load a day!)

For cleaning, especially my stove and counters, I use a mix of 1/2 white vinegar 1/2 water in a spray bottle I got at the dollar store. I just spray, wait a couple minutes and wipe. It works better than the spray from under my sink, a heck of a lot cheaper, and it's safe for the kid and the dogs.

For the Dishwasher, I use the recipe from the link. however, I didn't use the drink mix, just lemishine powder. It can get clumpy but it works great. Use either the lemishine rinse aid as well or white vinegar. At first I didn't use the epsom salt but trust me, you need it. I used to make my own baby wipes. I loved them more than the bought ones, however, getting the container opened one handed was a challenge so we are buying them again. If you have a little one that isn't so squirmy yet or are more nimble than me, go for it. MUCH cheaper, MUCH better for the environment and they smell so amazing!


Some of the best weed killer I've ever used is...wait for it..... Vinegar! (There's not alot that stuff won't do! I buy it by the gallon!) Just spray - or in my case, pour - on the weeds in the morning of a hot day with no rain (just the weeds though!) and let mother nature do the rest. It might take a day or two to do it, but they will be GONE! We have a problem with these prickly weed things in the grass and now it's all fixed! Give it a try!
